The Fleur de Sel de Guérande from Max Daumin comes from Batz sur Mer, just opposite Guérande on the Croisic peninsula. Located in the Protected Geographical Indication zone, our producer cultivates salt from father to son. They collect nectar from salt marshes. Fleur de Sel de Guérande is a natural product, a true fruit of the ocean, wind and sun. It represents the thin layer of crystals on the surface of salt marshes. Like the imperial picking of tea or neguine saffron, Fleur de Sel represents the most subtle and refined salt that one can have. Guérande Fleur de Sel has been cultivated for centuries. From the Iron Age it was harvested on the Croisic peninsula. It was the monks of Landévennec Abbey who founded the Batz priory in 945. They built a whole network of saltworks ensuring prosperity on the Croisic and Guérande peninsula.
