This rare vintage, made from pure Roussanne , reveals all the richness of the grape variety in an expression that is unique, complex and vibrant. On the nose, Roussanne de Las Vals offers a chiseled bouquet, blending aromas of tangy white fruits , delicate flowers and subtle hints of citrus. On the palate, the texture is ample and silky , supported by a beautiful structuring acidity that provides length and tension. The finish, remarkably long , leaves a lingering impression of mineral freshness. This organic and natural orange wine , produced on the vibrant terroirs of the Montagne d'Alaric, is aimed at lovers of unique and refined vintages. It will go wonderfully with dishes of character such as mature cheeses, Asian or vegetable cuisine. In the heart of the Corbières, nestled in the foothills of the Montagne d'Alaric, Château La Baronne is a family estate that embodies the soul of Languedoc. For over a century, the Lignères family, passionate doctors and winemakers , have watched over this exceptional vineyard located in a preserved natural ecosystem. On these lands shaped by the four great geological eras, the vines flourish between 100 and 200 meters above sea level, on soils rich in clay, limestone and sandstone. Centenary Carignan, Grenache, Syrah, Mourvèdre, but also Vermentino, Roussanne or even Grenache blanc and gris: the emblematic grape varieties of the south express themselves here with authenticity. From Louis Lignères, who founded the house in 1890, to Jean and Anne, who perpetuate its spirit today, five generations have succeeded one another with the same desire: to reveal the beauty of the Alaric terroirs through sincere, lively and committed vintages.

Aging: Hand-picked, sorted in the vineyard and in the cellar before destemming. 30% of the volume is aged in terracotta jars and eggs with juice/berry maceration for 8 months. The remainder is aged in a small stainless steel vat after pressing, fermentation with indigenous yeasts, and the MLF is completed. Aging and refining in terracotta jars for 12 months.
