HISTORY OF THE ESTATE

Located in the heart of the Hautes Corbières Massif and the Cathar Castles, in a valley bathed by the blue sky of the Mediterranean Coast, is the terroir of Château de Nouvelles . This land is a veritable mosaic of stony, clay-limestone and shale soils, spreading over an altitude varying from 150 meters to 430 meters. The estate brings together all the grape varieties of the region, such as Grenache, Syrah, Carignan and Muscat, to produce mineral wines that are very popular with consumers. Their exceptional quality is the fruit of the unique and diverse terroir of Château de Nouvelles. constitute an excellent introduction to Corbières and the richness of this surprising terroir.

FOOD AND WINE

It goes well with country ham, all cold meats and grilled meats. It also goes well with regional dishes, cassoulet and confit. Hard or blue cheeses like Roquefort.

Aging: Manual harvest at maturity in 25kg crates and placed in vats destemmed and crushed. Maceration with pumping over to extract the material and round out the tannins. Traditional vinification with temperature control and long vatting, until the cap of marc is immersed. One year in vat to be able to make the withdrawals. Bottling with light filtration to preserve the organoleptic qualities of the wine.
